Instructions

  1. Roast the Sweet Potatoes:

  3. On a baking sheet, toss the diced sweet potatoes with 1 tablespoon of olive oil, salt, pepper, paprika, and garlic powder.
  4. Spread them in a single layer and roast for 25 to 30 minutes, flipping halfway through, until they are tender and slightly caramelized.
  5. Cook the BBQ Chicken:
  6. While the potatoes roast, lightly season the chicken breasts with salt and pepper.
  7. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Cook the chicken for 6-7 minutes per side, until fully cooked and the internal temperature reaches 165°F (74°C).
  8. Remove the chicken from the skillet and let it rest for a few minutes before slicing or shredding.
  9. Toss the sliced or shredded chicken with warm BBQ sauce until it is fully coated.
