The mini loaves are baked until cooked through, then topped with shredded cheddar cheese and returned to the oven just long enough for the cheese to melt. Ingredients

  • 1 package (6 ounces) stuffing mix
  • 1 cup water
  • 2 tablespoons hickory smoke-flavored barbecue sauce
  • 1 pound ground beef
  • 1 cup shredded cheddar cheese
  • Additional hickory smoke-flavored barbecue sauce, for serving (optional)

Instructions

  1. Preheat the oven to 375°F.
  2. In a large bowl, combine the stuffing mix, water, and 2 tablespoons of barbecue sauce.
  3. Add the ground beef to the bowl and mix lightly but thoroughly with your hands until just combined.
  4. Press about 1/3 cup of the meat mixture into each of 12 ungreased muffin cups.
  5. Bake, uncovered, for 18-22 minutes, or until a meat thermometer inserted into the center of a meatloaf reads 160°F.
  6. Sprinkle the tops with the shredded cheddar cheese.
  7. Bake for an additional 2-4 minutes, until the cheese is melted.
  8. Serve with additional barbecue sauce, if desired.
