They are heated on the griddle until the tortillas begin to crisp, then finished with fresh shredded lettuce and more salsa before being folded and served.

Ingredients

  • 1 can (16 ounces) fat-free refried beans
  • 1/2 cup salsa, divided
  • 4 flour tortillas (8 inches)
  • 1/2 cup crumbled Cotija cheese or shredded Monterey Jack cheese
  • 3 bacon strips, cooked and coarsely chopped
  • 2 cups shredded lettuce

Instructions

  1. In a small bowl, mix the refried beans and 1/4 cup of the salsa until blended.
  2. Place the tortillas on a griddle or large skillet over medium heat and cook for 1 minute.
  3. Turn the tortillas over. Spread the bean mixture onto the centers of the warm tortillas.
  4. Top the bean mixture with the cheese and the chopped bacon.
  5. Continue to cook for 1-2 minutes longer, until the tortillas begin to crisp and the cheese is melted.
  6. Remove the tortillas from the griddle. Immediately top them with the shredded lettuce and the remaining 1/4 cup of salsa.
  7. To serve, fold the bottom and sides of each tortilla over the filling to create a burrito.
