The soup is finished with a squeeze of fresh lime juice and can be easily customized with a wide variety of vegetables, proteins, and toppings.

Ingredients

  • 1 (32-ounce) carton low-sodium chicken broth
  • 2 to 3 green onions, sliced, with dark green ends reserved for garnish
  • 1 (1-inch) piece of ginger, sliced
  • 1 medium clove garlic, minced
  • Salt, to taste
  • 20 frozen mini chicken wontons
  • Fresh lime juice, to taste
  • Suggested Add-ins and Toppings:
  • Fresh greens (spinach, bok choy, kale)
  • Extra protein (rotisserie chicken, shrimp, tofu, soft-boiled egg)
  • Noodles (ramen, soba, udon)
  • Fresh herbs (cilantro, Thai basil)

Instructions

  1. In a medium pot, combine the chicken broth, the white and light green parts of the green onions, the sliced ginger, and the minced garlic.
  2. Bring the broth to a boil over high heat. Once boiling, cover the pot with a lid, reduce the heat to low, and let it simmer for 8 to 10 minutes to infuse the flavors.
  3. Remove the lid and season the broth with salt to taste.
  4. Bring the broth back up to a boil and add the frozen wontons. Cook according to the package directions until the wontons are tender and cooked through.
  5. Turn off the heat and stir in fresh lime juice to taste. Adjust seasoning with more salt if needed.
  6. Serve immediately, garnished with the reserved dark green ends of the onions and any other desired toppings.
