Instructions

Let’s assemble this classic broccoli salad:

1. Cook and Crumble Bacon:

  • Place the bacon slices in a large, deep skillet. Cook over medium-high heat, turning occasionally, until the bacon is crisp and evenly browned, typically 8 to 10 minutes.
  • Transfer the cooked bacon to a paper towel-lined plate to drain excess grease.
  • Once the bacon is cool enough to handle, crumble it into small pieces.

2. Prepare Salad Base:

  • Chop the fresh broccoli into small, bite-sized florets. Finely chop the red onion. Shred the sharp Cheddar cheese (if not using pre-shredded).
  • In a large salad bowl, combine the crumbled bacon, chopped broccoli, shredded cheese, and chopped red onion.

3. Make the Dressing:

  • In a separate small bowl, whisk together the mayonnaise, red wine vinegar, white sugar, ground black pepper, salt, and cayenne pepper until well combined and smooth.
  • Stir in the fresh lemon juice. Taste the dressing and adjust salt, pepper, or sugar if needed.

4. Combine Salad and Dressing:

  • Pour the prepared dressing over the broccoli, bacon, cheese, and onion mixture in the large salad bowl.
  • Toss well until all the ingredients are evenly coated with the creamy dressing.

5. Chill to Meld Flavors:

  • Cover the bowl with plastic wrap or transfer the salad to an airtight container.
  • Refrigerate for at least 1 hour (or preferably 1 2-4 hours, or even overnight) before serving. This crucial chilling time allows the flavors to meld together beautifully and the broccoli to soften slightly.

6. Serve:

  • Give the salad another gentle toss before serving. Serve chilled.

Chilling is key for the best flavor!
