Ingredients

  • 1 tablespoon olive oil
  • 3 to 4 garlic cloves, minced
  • 2 (15-ounce) cans cannellini beans, drained and rinsed
  • 3/4 cup vegetable broth or chicken broth
  • 1 (10 to 12-ounce) bag frozen chopped broccoli
  • 4 ounces (1 packed cup) grated sharp cheddar cheese, plus more for garnish
  • 1/2 teaspoon kosher salt, or to taste
  • 1/2 teaspoon freshly ground black pepper, or to taste

Instructions

  1. Place a medium pot over medium heat and add the olive oil. Once hot, add the minced garlic and cook for about 30 seconds, until fragrant but not browned.
  2. Add the drained and rinsed beans and the broth to the pot. Bring the mixture to a simmer.
  3. Using a potato masher or a wooden spoon, mash about one-quarter of the beans against the side of the pot to help thicken the base.
  4. Add the frozen broccoli, stir, and cover the pot with a lid. Cook for 3 to 6 minutes, stirring a few times, until the beans are hot and the broccoli is tender.
  5. Remove the lid and turn the heat to low. Add half of the cheese, stirring until it melts. Add the remaining cheese and stir until the sauce is smooth and creamy.
  6. Season with salt and pepper to taste.
  7. Serve hot, topped with a sprinkle of extra cheese for garnish.
