This simple punch is created by mixing thawed frozen limeade concentrate with chilled ginger beer. Ingredients

  • 3/4 cup frozen limeade concentrate (about 1/2 of a 12-ounce can), thawed
  • 3 (12-ounce) cans ginger beer, chilled
  • 1 cup coconut rum or vodka (optional)
  • 1 pint green tea ice cream

Instructions

  1. In a large punch bowl, stir together the thawed limeade concentrate, 3 1/2 cups of cold water, and 1 can of the chilled ginger beer.
  2. If making an alcoholic version, stir in the coconut rum or vodka.
  3. Add scoops of the green tea ice cream into the punch.
  4. Just before serving, pour the remaining 2 cans of ginger beer over the top of the ice cream to create a bubbling, foaming effect.
  5. Ladle into glasses and serve immediately.
