Ingredients

  • Four 8-ounce rectangular blocks yellow Cheddar
  • Four 8-ounce rectangular blocks white Cheddar
  • 1 pound goat cheese
  • 2 tablespoons red wine
  • 1 tablespoon paprika
  • Crackers, for serving

Instructions

  1. Special Equipment: You may need skewers to temporarily hold the tower together. A pastry brush is needed for ‘painting.’
  2. On a cheese board, place 2 blocks of the yellow cheese side by side, pressing them together. Stack the remaining 2 blocks of yellow cheese on top of them.
  3. Stack the 4 blocks of white cheese on top of the yellow cheese base in the same manner. If needed, insert a couple of skewers down through the tower to hold it together while you work.
  4. Using a sharp knife, carefully carve away the sides of the cheese blocks to create the tapered shape of a candy corn.
  5. Once carved, remove the skewers. Using your hands, mold the goat cheese into a pointed tip and add it to the top of the cheese stack.
  6. In a small bowl, whisk together the red wine and paprika. Use a pastry brush to ‘paint’ this mixture onto the white Cheddar portion of the tower to create the orange middle section.
  7. Serve with crackers.
