  • 4.5 lbs boneless, skinless chicken breasts
  • 4.5 teaspoons paprika
  • 4.5 teaspoons dried oregano
  • 3 teaspoons garlic powder
  • 1.5 teaspoons dried thyme
  • 1.5 teaspoons black pepper
  • 1.5 teaspoons salt
  • 36 oz gluten-free farfalle pasta
  • 12 tablespoons butter
  • 6 teaspoons dry shallots
  • 6 teaspoons Italian seasoning
  • 1.5 cups chicken broth
  • 6 tablespoons gluten-free 1-to-1 flour
  • 9 cups heavy cream
  • 36 oz shredded Parmesan cheese
  • ¾ cup pasta water
  • 1.5 teaspoons salt

Instructions

  • Cook the Pasta: Cook the pasta according to package directions until al dente. Drain, reserving ¾ cup of pasta water, and set aside.
  • Season the Chicken: Combine paprika, oregano, garlic powder, thyme, salt, and pepper in a small bowl. Pound the chicken breasts to an even thickness and season both sides with the spice mixture.
  • Sear the Chicken: Heat olive oil in a large skillet over medium heat. Sear the chicken for 5 minutes per side, then reduce heat to medium-low, cover, and cook for an additional 10-12 minutes, or until the internal temperature reaches 165°F (74°C). Remove the chicken from the pan and set aside.
  • Make the Sauce: Melt butter in the same skillet. Add shallots, garlic powder, and Italian seasoning; simmer for 1 minute. Stir in the flour, then whisk in the chicken broth and heavy cream until smooth. Add Parmesan cheese and stir until melted. Cook until the sauce reaches your desired consistency.

 

  • Combine and Serve: Add the cooked pasta to the sauce and toss to coat. Add reserved pasta water, 1 tablespoon at a time, to thin out the sauce as needed. Slice the cooked chicken and add it to the pasta. Stir gently and serve immediately.
