Chicken with Buttered Noodles: A Classic Comfort Meal

  • 4 boneless, skinless chicken breasts, pounded to even thickness
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 8 ounces mushrooms, sliced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • 12 ounces noodles, cooked and buttered
  • Fresh parsley, chopped for garnish

 

  • Grated Parmesan cheese, for garnish

Instructions

  • Prepare the Ingredients: Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and pepper.
  • Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook until golden brown on both sides and cooked through, about 4-5 minutes per side. Remove from the skillet and set aside.
  • Prepare the Sauce: In the same skillet, melt the butter. Add the sliced mushrooms and cook until browned, about 5 minutes. Add the garlic, thyme, and oregano, and cook until fragrant, about 1-2 minutes.
  • Deglaze the Pan: Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan. Reduce the liquid by half, about 5 minutes.
  • Finish the Sauce: Add the heavy cream to the skillet and return to a simmer. Cook until the sauce thickens slightly, about 3-4 minutes.
  • Combine: Return the cooked chicken to the skillet, coating it with the sauce, and warm through.

 

  • Serve: Place the buttered noodles on a plate and top with the chicken and sauce. Garnish with fresh parsley and grated Parmesan cheese. Serve immediately and enjoy!
