  • 1 cup shredded whole-milk mozzarella
  • 1/2 cup whole-milk ricotta cheese
  • 1/3 cup grated pecorino cheese
  • 1/4 cup plus 1 teaspoon olive oil

Instructions

  1. Preheat the oven to 375°F. Line an upside-down baking sheet with parchment paper.
  2. Make the Filling: In a food processor, pulse the basil, toasted pine nuts, garlic, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper until coarsely chopped. With the motor running, drizzle in 1/4 cup of the olive oil until incorporated to make a chunky pesto.
  3. In a medium bowl, combine the mozzarella, ricotta, and pecorino cheeses with 1/2 teaspoon of salt and 1/4 teaspoon of pepper. Add the prepared pesto to the cheese mixture and stir to combine.
  4. Shape the Tree: Roll out the pizza dough into a 12-by-15-inch rectangle. Using a pizza cutter, cut the dough into one large triangle and two smaller triangles.
  5. Combine the two smaller triangles on the prepared baking sheet to form one large triangle, pressing the seam together. This will be the base of the tree.
  6. Spread the pesto and cheese mixture evenly over the base, leaving a 1/4-inch border.
  7. Cover the filling with the remaining large triangle of dough, stretching it as needed to fit. Firmly press the edges to seal.
  8. Leaving a 1-inch ‘trunk’ down the center of the tree, use a sharp knife to cut horizontal ‘branches,’ about 1 1/2 inches apart, from the trunk to each edge.
  9. Carefully twist each ‘branch’ a few times to reveal the layers of cheese and pesto.
  10. Bake for 20 to 25 minutes, until golden brown. Lightly brush the warm breadsticks with the remaining 1 teaspoon of olive oil. Serve warm.
