Churro Cheesecake Donut Cookies: A Sweet and Spicy Mashup

These Churro Cheesecake Donut Cookies are a delicious mashup of flavors and textures! They’re easy to make, packed with cinnamon sugar goodness, and perfect for any occasion.

  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ¼ cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup cream cheese, softened
  • ¼ cup granulated sugar (for coating)

 

  • 1 tablespoon ground cinnamon (for coating)

Instructions

  • Preheat and Prep: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt.
  • Combine Wet Ingredients: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. Then, blend in the softened cream cheese until smooth.  
  • Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Scoop and Bake: Scoop the cookie dough onto the prepared baking sheet using a cookie scoop or a spoon, spacing them about 2 inches apart. Bake for 12-15 minutes, or until the edges are lightly golden.
  • Cool: Remove the cookies from the oven and let them cool on a wire rack.
  • Coat in Cinnamon Sugar: While the cookies are still warm, mix together the granulated sugar and cinnamon in a small bowl. Roll each cookie in the cinnamon sugar mixture to coat evenly.
