  • 2 cups cottage cheese
  • 1 egg
  • ½ cup all-purpose flour
  • ¼ cup sugar
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • Zest of 1 lemon (or 2 teaspoons vanilla extract)
  • 1 cup blueberries (optional)

Instructions

  • Preheat and Prep: Preheat oven to 350°F (177°C). Grease a pie dish or an 8×8 inch baking dish with cooking spray or butter.
  • Combine Ingredients: In a mixing bowl, combine the cottage cheese, egg, sugar, and lemon zest (or vanilla extract). Mix well until smooth and creamy.
  • Add Dry Ingredients: Add the flour, salt, and baking soda to the bowl. Mix until just combined. Do not overmix.
  • Fold in Blueberries: Gently fold in the blueberries, if using.
  • Bake: Pour the batter into the prepared baking dish and bake for 30-35 minutes, or until golden brown and set.

 

  • Serve: Let the bake cool slightly before serving. Enjoy warm or cold, on its own or with a dollop of yogurt or whipped cream.
