Instructions

  1. Preheat your oven to 375°F (190°C). Grease an 8×8-inch baking dish.
  2. Make the Base: In a blender or food processor, combine the cottage cheese, eggs, ¼ cup of honey (or maple syrup), vanilla extract, and ½ teaspoon of cinnamon. Blend until the mixture is completely smooth.
  3. Pour the blended mixture into the prepared baking dish.
  4. Gently fold in the blueberries, distributing them evenly throughout the mixture.
  5. Make the Topping: In a small bowl, mix together the rolled oats, almond flour, melted butter (or coconut oil), 1 tablespoon of honey (or maple syrup), and ¼ teaspoon of cinnamon until a crumbly texture forms.
  6. Sprinkle the crumble topping evenly over the cottage cheese mixture in the baking dish.
  7. Bake: Place the dish in the preheated oven and bake for 35-40 minutes, or until the top is golden brown and the center is set (no longer jiggly).
  8. Cool & Serve: Let the bake cool for at least 10 minutes before slicing. It can be served warm or chilled.
