  • 2 long sweet peppers, thinly sliced (or 12 bell peppers)
  • 4 small chicken breasts (boneless, skinless, approx. 2 lbs total)
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1/4 tsp cayenne pepper (adjust to taste)
  • 1/2 tsp oregano (dried)
  • ¼ tsp salt
  • 1/8 tsp black pepper
  • 6 cloves garlic, minced
  • 1 cup cream cheese, softened (8 oz block)
  • ½ cup cheddar cheese, shredded

(Optional Garnish: Fresh parsley or cilantro)

Instructions

Let’s walk through the simple steps to create this dish:

1. Prepare Oven and Baking Dish: Preheat the oven to 375°F (190°C). Spray a 9×13 inch baking dish (or similar size) with cooking spray or lightly grease with oil.  

 

2. Prepare Pepper Base and Chicken: Spread the thinly sliced sweet peppers evenly over the bottom of the prepared baking dish. Place the chicken breasts on top of the sliced peppers in a single layer.

3. Season the Chicken: In a small bowl, combine the smoked paprika, onion powder, cayenne pepper, oregano, salt, and black pepper. Mix the spices well. Sprinkle this mixture evenly over both sides of the chicken breasts, rubbing it in slightly. Distribute the minced garlic over both sides of the chicken as well, rubbing it in gently.

4. Add Cheese Toppings: Top each chicken breast with roughly equal amounts of the softened cream cheese (about 1/4 cup each, using up the full cup). Spread it slightly over the surface of the chicken. Sprinkle the shredded cheddar cheese evenly over the chicken breasts and peppers.

5. Bake: Place the baking dish in the preheated oven. Bake uncovered for 25-30 minutes, or until the chicken is cooked through (internal temperature reaches 165°F/74°C) and the juices run clear.

6. Broil (Optional): For a more golden and bubbly cheese topping, carefully switch the oven setting to Broil (High). Broil for 1-2 minutes, watching very closely to prevent burning, until the cheese is golden and bubbly to your liking.

7. Serve: Carefully remove the baking dish from the oven. Let it rest for a few minutes. Optionally, place some of the cooked pepper slices from the bottom of the dish on top of the chicken breasts before serving. Enjoy!
