Crispy Baked Tacos (An Easy 3-Ingredient Recipe!)

A hand dipping a crispy, homemade, golden-brown Baked Taco into a large bowl of guacamole at a fun family taco night.

A simple and quick vegetarian recipe for crispy ‘Cheesy Baked Tacos.’ This easy meal features thin corn tortillas that are spread with a layer of seasoned refried beans and topped with a Mexican-style shredded cheese blend. The tacos are baked open-faced on a preheated baking sheet until the cheese melts, then folded in half and baked again on both sides until they are gooey on the inside with a crispy, golden-brown exterior. They are perfect for a quick weeknight dinner or snack.

Ingredients

  • 6 (5 to 6-inch) thin corn tortillas
  • Cooking spray
  • 1/2 cup refried beans
  • 1/2 teaspoon chili powder (optional)
  • 1 1/2 cups Mexican-style blend shredded cheese
  • Salsa, sour cream, and/or guacamole, for serving

Instructions

  1. Preheat the oven to 450°F. Place a large, heavy baking sheet in the oven to heat up as it preheats.
  2. Spread about 1 heaping tablespoon of refried beans on one side of each tortilla. Dust each with chili powder, if using.
  3. Once the oven is preheated, carefully remove the hot baking sheet. Line it with parchment paper and spray generously with cooking spray.
  4. Arrange the tortillas on the baking sheet in a single layer, bean-side up. Top each tortilla with about 1/4 cup of shredded cheese, mounded in the center.
  5. Bake for 1 to 2 minutes, just until the cheese has melted and the tortilla is soft.
  6. Remove the pan from the oven. Immediately use a spatula to fold each tortilla in half to create a taco shape, pressing down lightly.
  7. Return the baking sheet to the oven and bake for 5 to 7 minutes, until the bottoms are lightly crisp.
  8. Flip the tacos and cook for 5 to 7 more minutes, until they are gooey with crispy cheese bits around the edges.
  9. Let the tacos cool for a few minutes before serving with salsa, sour cream, and/or guacamole for dipping.

Notes

  • This is a very fast and easy ‘Meatless Monday’ recipe.
  • The key technique for getting a crispy crust is to preheat the baking sheet in the hot oven before placing the tacos on it.
  • These tacos are baked instead of fried, making for an easier and less messy preparation.
  • Leftovers can be reheated in a 350°F oven or in an air fryer to re-crisp them.
