These Easter Cookies are a festive and delicious treat! They’re easy to make, packed with colorful candies and sprinkles, and perfect for Easter celebrations.

1 ½ cups plus 1 tablespoon all-purpose flour, spooned and leveled
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup unsalted butter, softened but still cool
½ cup granulated sugar
⅓ cup packed light brown sugar
1 large egg, cold
2 teaspoons pure vanilla extract
¾ cup Easter/spring M&M’s, plus extra for topping (optional)
½ cup white chocolate chips or chunks, plus extra for topping (optional)
¼ cup pastel sprinkles
Instructions
Preheat and Prep: Preheat oven to 350°F (177°C) and line baking sheets with parchment paper.
Combine Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, and salt.
Cream Butter and Sugars: In a separate bowl, cream together butter and sugars until light and fluffy. Beat in the egg and vanilla extract. Gradually add the dry ingredients and mix until just combined.
Add Mix-Ins: Gently stir in the M&M’s and white chocolate chips. Place the sprinkles in a shallow bowl.
Scoop and Coat: Scoop balls of cookie dough (1 ½ to 2 ½ tablespoons each) and press the tops into the sprinkles.
Bake: Place dough balls on prepared baking sheets, leaving space for spreading. Bake for 8-11 minutes, or until the edges are set but the center is slightly soft.
Cool and Decorate: Let cookies cool completely on baking sheets. If desired, press extra M&M’s and/or chocolate chips onto the warm cookies.
