Ingredients

  • 180 grams (¾ cup) Greek yogurt
  • 1 egg
  • 60 grams (½ cup) unsweetened cocoa powder
  • 80 grams (⅓ cup + 1 tablespoon) granular sweetener (erythritol)

 

  • Optional:
    • ½ teaspoon coffee powder
    • ⅙ teaspoon salt
    • 23 tablespoons chocolate chips

Instructions

  • Preheat and Prep: Preheat oven to 350°F (180°C) and line a 7×7 inch baking pan with parchment paper, leaving an overhang for easy removal.
  • Mix the Batter: In a mixing bowl, combine the Greek yogurt, egg, cocoa powder, granular sweetener, and optional ingredients (coffee powder and salt). Stir until well combined and you have a smooth batter.
  • Bake: Pour the batter into the prepared pan and sprinkle with chocolate chips, if desired. Bake for 22-30 minutes, or until a toothpick inserted into the center comes out mostly clean.

 

  • Cool and Store: Let the brownies cool completely in the pan before slicing and serving. Store leftovers in an airtight container in the refrigerator for up to 4 days.
