  • 2 (9 inch) prepared graham cracker crusts
  • 1 (12 ounce) jar caramel ice cream topping

Instructions

  1. Make the Topping: Melt the butter in a medium skillet over medium heat. Stir in the chopped pecans and shredded coconut until coated.
  2. Sauté for about 5 minutes, stirring frequently, until both the pecans and coconut are lightly toasted and fragrant. Remove from the heat and set aside.
  3. Make the Filling: In a large bowl, beat the sweetened condensed milk and the softened cream cheese with an electric mixer until the mixture is light and fluffy.
  4. Gently fold in the thawed whipped topping until just combined.
  5. Assemble the Pies: Spoon one-quarter of the whipped topping mixture into the bottom of each of the two graham cracker crusts.
  6. Top each with one-quarter of the caramel topping.
  7. Repeat the layers once more in each pie, using the remaining whipped topping mixture and caramel topping.
  8. Sprinkle the toasted coconut and pecan mixture evenly over the top of both pies.
  9. Freeze: Freeze the pies for at least 8 hours, or overnight, until firm.
  10. Let the pie sit at room temperature for a few minutes before slicing and serving.
