1 (18-ounce) jar creamy peanut butter
2 1/2 cups confectioners’ sugar
1 teaspoon vanilla extract
8 ounces semi-sweet chocolate, chopped
Instructions
In a large bowl, beat the peanut butter and confectioners’ sugar together using an electric mixer or whisk until the mixture is smooth and stiff.
Mix in the vanilla extract until well combined.
Shape the mixture into 20 (1-inch) balls and place them on a waxed paper-lined sheet tray.
Freeze the tray for 1 hour to firm up the bites.
Melt the chopped chocolate in a small bowl set over gently simmering water, stirring until smooth. Remove from heat.
Using two forks, dip each chilled peanut butter ball halfway into the melted chocolate. Let any excess chocolate drip off and return them to the waxed paper-lined tray.
Use a fork to drizzle additional chocolate over the top of each bite for decoration.
Refrigerate for 30 minutes, or until the chocolate has set and the bites are firm.
Notes
If preparing on a hot or humid day, dust your hands with confectioners’ sugar to prevent the peanut butter mixture from sticking while rolling.
You can use dark chocolate or milk chocolate depending on your preference.
These bites can be stored in an airtight container in the fridge or freezer for longer shelf life.
