1 teaspoon baking soda
1 teaspoon salt
1 cup butter, softened
¾ cup granulated sugar
¾ cup packed brown sugar
1 teaspoon vanilla extract
2 eggs
2 cups semi-sweet chocolate chips
Caramel Sauce:
5 oz evaporated milk
1 bag (14 oz) caramels
½ cup peanut butter
Instructions
Preheat and Prep: Preheat oven to 375°F (190°C). Grease a 9×13 inch baking pan.
Make Cookie Dough: In a small bowl, whisk together the flour, baking soda, and salt. In a large bowl, cream together the butter, granulated sugar, brown sugar, and vanilla extract until light and fluffy. Beat in the eggs one at a time. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the chocolate chips.
Bake the Base: Spread half of the cookie dough into the prepared pan. Bake for 8-10 minutes, or until lightly golden.
Make Caramel Sauce: While the base is baking, melt the caramels and evaporated milk in a double boiler or a heat-safe bowl set over a saucepan of simmering water. Once melted, stir in the peanut butter until smooth.
Layer and Bake: Spread the caramel sauce over the baked cookie base. Drop spoonfuls of the remaining cookie dough over the caramel layer. Bake for 15-20 minutes, or until golden brown.
Cool and Serve: Let the bars cool completely in the pan before cutting and serving.
