Ingredients
- 2 ¼ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup butter, softened
- ¾ cup granulated sugar
- ¾ cup packed brown sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 2 cups semi-sweet chocolate chips
Caramel Sauce:
- 5 oz evaporated milk
- 1 bag (14 oz) caramels
- ½ cup peanut butter
Instructions
- Preheat and Prep: Preheat oven to 375°F (190°C). Grease a 9×13 inch baking pan.
- Make Cookie Dough: In a small bowl, whisk together the flour, baking soda, and salt. In a large bowl, cream together the butter, granulated sugar, brown sugar, and vanilla extract until light and fluffy. Beat in the eggs one at a time. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the chocolate chips.
- Bake the Base: Spread half of the cookie dough into the prepared pan. Bake for 8-10 minutes, or until lightly golden.
- Make Caramel Sauce: While the base is baking, melt the caramels and evaporated milk in a double boiler or a heat-safe bowl set over a saucepan of simmering water. Once melted, stir in the peanut butter until smooth.
- Layer and Bake: Spread the caramel sauce over the baked cookie base. Drop spoonfuls of the remaining cookie dough over the caramel layer. Bake for 15-20 minutes, or until golden brown.
- Cool and Serve: Let the bars cool completely in the pan before cutting and serving.
