  • 1 ¼ cups old-fashioned rolled oats
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ½ cup granulated sugar
  • ½ cup packed light brown sugar
  • ¾ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 (14 oz) can sweetened condensed milk
  • 2 tablespoons finely grated lemon zest
  • ½ cup fresh lemon juice

 

  • 2 large egg yolks

Instructions

  • Preheat and Prep: Preheat oven to 350°F (175°C) and grease an 8×8 inch baking pan with baking spray.
  • Make the Crumb Mixture: In a large bowl, combine the flour, oats, salt, baking soda, granulated sugar, and brown sugar. Stir in the melted butter and vanilla extract until well combined.
  • Press the Crust: Press half of the crumb mixture firmly into the bottom of the prepared pan.
  • Bake the Crust: Bake for 15 minutes.
  • Make the Filling: While the crust is baking, whisk together the condensed milk, lemon zest, lemon juice, and egg yolks in a separate bowl.
  • Assemble: Pour the lemon filling over the baked crust and sprinkle the remaining crumble mixture evenly over the top.
  • Bake: Bake for an additional 20-22 minutes, or until lightly golden.
  • Cool and Chill: Allow the bars to cool completely in the pan, then refrigerate until firm.

 

  • Optional Chocolate Dip: For an extra treat, dip the bottom half of the frozen bars in melted white chocolate. Place them on a wax paper-lined baking sheet and refrigerate until the chocolate is set.
