Ingredients
1 cup (2 sticks) softened butter (or margarine)
1 cup (200g) granulated sugar
¾ cup (150g) packed brown sugar
2 large eggs
1 teaspoon vanilla extract
2 teaspoons baking soda
½ teaspoon salt
1 ¼ cups (125g) unsweetened cocoa powder
1 ¾ cups (219g) all-purpose flour
1 cup (170g) white chocolate chunks
1 cup Lucky Charms marshmallows
Topping: a few more Lucky Charms marshmallows & flaky sea salt
Instructions
Preheat and Prep: Preheat oven to 350°F (177°C) and line baking sheets with parchment paper or silicone baking mats.
Cream Butter and Sugars: In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
Add Eggs and Vanilla: Beat in the eggs one at a time, then stir in the vanilla extract.
Combine Dry Ingredients: In a separate bowl, whisk together the baking soda, salt, cocoa powder, and flour.
Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
Add Mix-Ins: Stir in the white chocolate chunks and Lucky Charms marshmallows.
Scoop and Bake: Scoop the cookie dough onto the prepared baking sheets, spacing them about 2 inches apart. Gently press down the tops of the cookies if you prefer a flatter shape. Add a few extra Lucky Charms marshmallows on top for decoration. Bake for 9-11 minutes, or until the edges are set and the center is slightly soft.
Cool and Serve: Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. Sprinkle with flaky sea salt immediately after removing from the oven. Store in an airtight container for 3-4 days or freeze for longer storage.
