Lucky Charms Cookies: A Magically Delicious Treat

These Lucky Charms Cookies are a fun and festive treat! They’re easy to make, packed with colorful marshmallows, and perfect for any occasion.

  • 1 ¼ cups granulated sugar
  • 1 large egg, at room temperature
  • 2 teaspoons vanilla extract
  • 2 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

 

  • 2 cups Lucky Charms marshmallows

Instructions

  • Preheat and Prep: Preheat oven to 350°F (177°C) and line a baking sheet with parchment paper.
  • Cream Butter and Sugar: In a large bowl, cream together the butter and granulated sugar until light and fluffy using a stand mixer or handheld mixer.
  • Add Wet Ingredients: Beat in the egg and vanilla extract until well combined.
  • Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Add Marshmallows: Stir in 1 cup of the Lucky Charms marshmallows.
  • Scoop and Bake: Scoop the cookie dough onto the prepared baking sheet using a cookie scoop or a spoon, spacing them about 2 inches apart. Bake for 9-11 minutes, or until the edges are lightly golden brown.
  • Decorate: Remove the cookies from the oven and immediately press several Lucky Charms marshmallows into the tops of each cookie.

 

  • Cool: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. 10. Store: Store the cookies in an airtight container for up to 3 days
