1 cup unsalted butter, softened
1 ¼ cups granulated sugar
1 large egg, at room temperature
2 teaspoons vanilla extract
2 ½ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon salt
2 cups Lucky Charms marshmallows
Instructions
Preheat and Prep: Preheat oven to 350°F (177°C) and line a baking sheet with parchment paper.
Cream Butter and Sugar: In a large bowl, cream together the butter and granulated sugar until light and fluffy using a stand mixer or handheld mixer.
Add Wet Ingredients: Beat in the egg and vanilla extract until well combined.
Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Add Marshmallows: Stir in 1 cup of the Lucky Charms marshmallows.
Scoop and Bake: Scoop the cookie dough onto the prepared baking sheet using a cookie scoop or a spoon, spacing them about 2 inches apart. Bake for 9-11 minutes, or until the edges are lightly golden brown.
Decorate: Remove the cookies from the oven and immediately press several Lucky Charms marshmallows into the tops of each cookie.
Cool:Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. 10.Store: Store the cookies in an airtight container for up to 3 days
