Lucky Charms Cookies: A Magically Delicious Treat

These Lucky Charms Cookies are a fun and festive treat! They’re easy to make, packed with minty flavor and colorful marshmallows, and perfect for any occasion.

  • ½ cup softened butter
  • ¾ cup granulated sugar
  • 1 large egg
  • ¾ tablespoon mint extract
  • 34 drops green food coloring
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cream of tartar
  • ¼ teaspoon salt
  • 1 cup mint chocolate chips

 

  • 1 ½ cups Lucky Charms marshmallows

Instructions

  • Preheat and Prep: Preheat oven to 350°F (177°C) and line a baking sheet with parchment paper or a silicone baking mat.
  • Cream Butter and Sugar: In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  • Add Wet Ingredients: Beat in the egg and mint extract. Add the green food coloring, a few drops at a time, until you reach your desired shade of green.
  • Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, cream of tartar, and salt.
  • Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.  
  • Add Mix-Ins: Gently fold in the mint chocolate chips and Lucky Charms marshmallows until evenly distributed.
  • Shape and Bake: Roll the cookie dough into small balls (about 1-inch in diameter) and place them on the prepared baking sheet, spacing them about 2 inches apart. Bake for 10 minutes, or until the edges are lightly golden brown.

 

  • Cool: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
