Mint Chocolate Chip Rice Krispie Treats: A Refreshing Twist on a Classic

These Mint Chocolate Chip Rice Krispie Treats are a delicious and refreshing twist on a classic snack! They’re easy to make, packed with minty flavor and chocolate chips, and perfect for any occasion.

  • 4 ⅔ cups Rice Krispies Cereal
  • 4 tablespoons salted butter
  • 10 ounces marshmallows
  • 1 teaspoon peppermint extract
  • Green food coloring (about 10 drops of liquid coloring)

 

  • ¾ cup mini chocolate chips

Instructions

  • Prepare the Bowl and Melt Ingredients: Grease a large mixing bowl with butter or cooking spray. Pour the Rice Krispies cereal into the bowl and set aside. In a saucepan, melt the butter over low heat. Add the marshmallows and stir to coat. Continue heating and stirring until most of the marshmallows are melted, then remove from heat and stir until completely melted.
  • Add Flavor and Color: Stir in the peppermint extract and green food coloring.
  • Combine with Cereal: Pour the melted marshmallow mixture over the Rice Krispies cereal and stir until well combined. Let cool slightly.
  • Add Chocolate Chips: Reserve about 3 tablespoons of mini chocolate chips for topping. Toss the rest into the cereal mixture and stir until combined.
  • Press into Pan: Spread the mixture into a well-greased 8×8 inch pan. Sprinkle the reserved mini chocolate chips over the top and press them in gently.

 

  • Cool and Serve: Allow the treats to cool completely at room temperature for at least 30 minutes. Remove from the pan, cut into squares, and enjoy!
