1 large egg
1 large egg yolk
1 teaspoon peppermint extract
6–12 drops green food coloring
2 cups all-purpose flour
¾ teaspoon baking powder

Instructions
Preheat and Prep: Preheat oven to 350°F (177°C). Line a baking sheet with parchment paper, a Silpat mat, or grease it with nonstick baking spray.
Cream Butter and Sugar: In a large bowl, cream together the butter and powdered sugar until light and fluffy.
Add Wet Ingredients: Beat in the egg, egg yolk, and peppermint extract. Add the green food coloring, a few drops at a time, until you reach your desired shade of green.
Add Dry Ingredients: Gradually add the flour, baking powder, and salt to the wet ingredients, mixing until just combined.
Shape and Bake: Roll the cookie dough into 1-inch balls and place them on the prepared baking sheet. Bake for 7-9 minutes, or until the edges are lightly golden brown.
Add Chocolate Kisses: Remove the cookies from the oven and immediately press a chocolate kiss into the top of each cookie. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
