These No-Bake Peanut Butter Oat Cups are a healthy and delicious snack that’s perfect for satisfying your sweet tooth! They’re easy to make, packed with protein, and require no baking.

  • 1 ½ cups natural peanut butter
  • 1 ½ cups oat flour (rolled oats processed finely in a food processor)
  • ¼ cup maple syrup
  • 1 cup chocolate chips

 

  • 1 teaspoon coconut oil (optional)

Instructions

  • Prepare the Base: In a microwave-safe bowl, combine the peanut butter and maple syrup. Microwave for 40-60 seconds, or until melted and smooth. Stir well to combine. Gradually add the oat flour to the bowl and mix until a thick and moldable dough forms.
  • Fill the Muffin Cups: Line a muffin pan with cupcake liners or use a silicone muffin pan. Scoop the peanut butter oat mixture evenly into the muffin cups and press down firmly with your fingers to create an even base.
  • Melt the Chocolate: In a separate microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Microwave in 30-second increments, stirring between each interval, until the chocolate is melted and smooth.
  • Add the Chocolate Layer: Pour a layer of melted chocolate over the peanut butter oat base in each muffin cup. Smooth the top with the back of a spoon. If desired, sprinkle with flaky salt, sprinkles, or mini chocolate chips before the chocolate hardens.

 

  • Chill and Serve: Refrigerate the cups for 2-3 hours, or until the chocolate is set and the cups are firm. Carefully remove them from the muffin pan or liners and store in an airtight container in the refrigerator for up to 5 days.
