Prepare the Base: Line a large baking sheet with parchment paper. Add the Oreos to a blender or food processor and process until you have fine crumbs. In a large mixing bowl, combine the Oreo crumbs and softened cream cheese. If desired, reserve 1-2 tablespoons of the crumbs for garnish.
Mix: Using a handheld mixer or a sturdy spoon, mix the cookie crumbs and cream cheese together until fully combined.
Roll: Measure out one-tablespoon sized balls of the mixture, roll them into balls, and place them on the prepared baking sheet.
Freeze: Place the baking sheet with the Oreo balls in the freezer for at least 20 minutes to firm up.
Melt Chocolate: Once the Oreo balls are firm, chop the chocolate and place it in a microwave-safe bowl. Microwave in 20-30 second increments, stirring after each increment, until melted and smooth.
Dip and Decorate: Dip the frozen Oreo balls into the melted chocolate to coat them completely. Place them back on the baking sheet and sprinkle with the reserved Oreo crumbs, if desired.
Chill and Serve: Place the coated Oreo balls back in the refrigerator for at least 20 minutes, or until the chocolate has hardened. Serve and enjoy!
