Instructions

  1. In a small saucepan, bring the milk to a simmer. Remove from the heat and stir in the butter pieces and sugar until melted and dissolved. Let the mixture cool to lukewarm.
  2. In a small bowl, dissolve the yeast in the warm water and let it sit for about 5 minutes, until it becomes foamy.
  3. In the bowl of a stand mixer fitted with a dough hook, combine the cooled milk mixture, beaten eggs, yeast mixture, salt, and half of the flour (3 cups). Mix until smooth.
  4. Add the remaining flour, 1/2 cup at a time, and continue to mix until a smooth ball of dough forms.
  5. Turn the dough out onto a floured surface and knead by hand for about 5 minutes.
  6. Place the dough in a greased bowl, cover it, and let it rise in a warm place for 60 to 70 minutes, or until doubled in bulk.
  7. On a floured surface, punch down the dough. Shape the dough into your desired roll shapes and place them on a parchment paper-lined baking sheet.
  8. Cover the rolls again and let them rise for another 30 to 40 minutes, until doubled in size.
  9. Preheat the oven to 350°F.
  10. Bake the rolls for about 20 minutes, or until golden brown.
  11. Remove the rolls from the oven and brush them with melted butter before serving.
