  • 1 cup creamy natural peanut butter
  • ½ cup pure maple syrup
  • 1 tablespoon vanilla extract
  • 1 cup gluten-free rolled oats
  • 1 cup semi-sweet chocolate chips
  • 2 eggs
  • ½ teaspoon baking powder

 

  • ⅛ teaspoon sea salt

Instructions

  • Preheat and Prep: Preheat oven to 350°F (177°C). Line a baking sheet with parchment paper or use a non-stick baking sheet.
  • Combine Wet Ingredients: In a mixing bowl, beat together the peanut butter, maple syrup, eggs, and vanilla extract until well combined and smooth.
  • Combine Dry Ingredients: In a separate bowl, whisk together the oats, baking powder, and sea salt.
  • Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.  
  • Add Chocolate Chips: Stir in the chocolate chips until evenly distributed throughout the dough.
  • Bake: Drop spoonfuls of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 8-13 minutes, or until the edges are golden brown and the center is set.

 

  • Cool and Serve: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy!
