Peeps Sugar Cookie Bars: A Gooey and Colorful Easter Treat

These Peeps Sugar Cookie Bars are a gooey and colorful Easter treat! They’re easy to make, packed with sweet and chewy goodness, and perfect for Easter celebrations.

Ingredients

  • 16.5 oz tube of refrigerated sugar cookie dough
  • 8 Peeps marshmallows (or more, as desired)

Instructions

  • Preheat and Prep: Preheat oven to 350°F (177°C). Grease a baking dish with nonstick cooking spray.
  • Assemble: Divide the sugar cookie dough in half. Press half of the dough into the bottom of the prepared baking dish to form a crust. Arrange the Peeps marshmallows over the crust. Crumble the remaining cookie dough over the Peeps.
  • Bake: Bake for 8 minutes. While baking, prepare a spatula with nonstick cooking spray.
  • Swirl and Bake Again: Remove the dish from the oven and gently swirl the melted Peeps with the spatula. Try not to push down into the bottom crust. Return the dish to the oven and bake for another 12 minutes, or until the cookie dough is golden brown.
  • Cool and Chill: Let the bars cool completely in the baking dish, then place the dish in the refrigerator for about an hour to allow the filling to set.

 

  • Cut and Serve: Use a butter knife coated with nonstick spray to cut the bars into squares. Serve and enjoy!
