    • ⅓ cup smooth peanut butter

    • 1 scoop vanilla whey protein powder (about ⅓ cup)

    • 1 ½ cups dark chocolate chips

    • 1 tablespoon coconut oil

Instructions

  • Prepare the Muffin Tin: Place 6 paper liners in the wells of a muffin tin and set aside.
  • Make the Filling: In a small bowl, combine the peanut butter and whey protein powder. Mix well until smooth and creamy.
  • Melt the Chocolate: Place the dark chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second increments, stirring between each interval, until the chocolate is completely melted and smooth.
  • Create the Chocolate Layers: Pour about 1 tablespoon of melted chocolate into the bottom of each paper liner in the muffin tin. Place the muffin tin in the freezer for 10 minutes, or until the chocolate is set.
  • Add the Filling: Once the chocolate layer is firm, add 2 teaspoons of the peanut butter filling on top of each chocolate layer.
  • Top with Chocolate: Pour another tablespoon of melted chocolate over the peanut butter filling in each cup. Chill the cups in the refrigerator until the chocolate is firm.
