  • 1 pound your choice of pasta
  • 2 cups tomato sauce
  • 1 tablespoon tomato paste
  • ½ medium onion, minced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • ½ cup freshly grated Parmesan cheese
  • Salt and pepper to taste
  • ½ cup heavy cream
  • 1 teaspoon Italian seasoning
  • 2 teaspoons dried oregano
  • ¼ teaspoon red pepper flakes

 

  • Fresh cilantro, for garnish

Instructions

  • Cook the Pasta: Cook the pasta according to the package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta water.
  • Sauté the Aromatics: In a large skillet over medium heat, melt the butter. Add the minced onion and garlic, and sauté until fragrant and translucent.
  • Add Tomato Paste and Spices: Stir in the tomato paste, oregano, salt, and red pepper flakes. Mix well.
  • Create the Sauce: Lower the heat and pour in the tomato sauce, heavy cream, and Italian seasoning. Stir until the sauce is a lovely pink color and has thickened slightly. Simmer for a few minutes to allow the flavors to meld.
  • Combine with Pasta: Add the cooked pasta to the sauce and toss gently to coat. If the sauce seems too thick, add some of the reserved pasta water to reach your desired consistency.
  • Add Cheese: Once the pasta is well coated, sprinkle in the Parmesan cheese and toss again to melt and incorporate it into the sauce.

 

  • Serve: Serve the Rose Shrimp Pasta hot, garnished with fresh cilantro.
