1 pound your choice of pasta
2 cups tomato sauce
1 tablespoon tomato paste
½ medium onion, minced
2 cloves garlic, minced
2 tablespoons butter
½ cup freshly grated Parmesan cheese
Salt and pepper to taste
½ cup heavy cream
1 teaspoon Italian seasoning
2 teaspoons dried oregano
¼ teaspoon red pepper flakes
Fresh cilantro, for garnish
Instructions
Cook the Pasta: Cook the pasta according to the package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta water.
Sauté the Aromatics: In a large skillet over medium heat, melt the butter. Add the minced onion and garlic, and sauté until fragrant and translucent.
Add Tomato Paste and Spices: Stir in the tomato paste, oregano, salt, and red pepper flakes. Mix well.
Create the Sauce: Lower the heat and pour in the tomato sauce, heavy cream, and Italian seasoning. Stir until the sauce is a lovely pink color and has thickened slightly. Simmer for a few minutes to allow the flavors to meld.
Combine with Pasta: Add the cooked pasta to the sauce and toss gently to coat. If the sauce seems too thick, add some of the reserved pasta water to reach your desired consistency.
Add Cheese: Once the pasta is well coated, sprinkle in the Parmesan cheese and toss again to melt and incorporate it into the sauce.
Serve: Serve the Rose Shrimp Pasta hot, garnished with fresh cilantro.
