The Best Crispy & Fluffy Savory Protein Waffles

A beautiful plate of Savory Protein Waffles topped with smoked salmon, being served for an elegant brunc

A recipe for high-protein, savory waffles that use cottage cheese to create a moist and fluffy texture. The batter is made by blending cottage cheese and eggs until smooth, then combining the mixture with a blend of all-purpose and almond flours and seasonings. Finely chopped green bell peppers or jalapeños, chives, and grated Parmesan cheese are folded into the thick batter before it’s cooked in a waffle iron. These waffles are a versatile base for a variety of savory toppings.

Ingredients

Scale
  • For the Waffles:
  • 3/4 cup all-purpose flour
  • 1/2 cup almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt (optional)
  • 1 cup cottage cheese (whole milk)
  • 3 large eggs
  • 1/4 cup milk
  • 3 Tablespoons avocado oil
  • 3/4 cup finely chopped green bell pepper or jalapeño
  • 1 Tablespoon finely chopped chives (or green onions), plus more for garnish
  • 1/4 cup grated Parmesan cheese
  • Optional Toppings/Fillings:
  • Hot honey
  • Fried or poached egg
  • Smoked salmon or crispy prosciutto
  • Sautéed spinach or arugula
  • Avocado slices
  • Roasted tomatoes or grilled mushrooms
  • Hot sauce or herby yogurt sauce

Instructions

  1. In a large bowl, whisk together the all-purpose flour, almond flour, baking powder, garlic powder, onion powder, and pepper.
  2. In a blender, combine the cottage cheese, eggs, and milk. Blend until the mixture is completely smooth.
  3. Stir the avocado oil into the blended wet ingredients.
  4. Pour the blended ingredient mixture into the bowl with the dry ingredients and stir gently until just combined. The batter will be thick.
  5. Fold in the finely chopped green bell pepper (or jalapeño), chives, and grated Parmesan cheese.
  6. Preheat a waffle iron according to the manufacturer’s instructions.
  7. Scoop about 1/3 cup of batter into each waffle cavity.
  8. Cook for 3-6 minutes, or until the waffles are golden brown and cooked through (the exact time will depend on your waffle iron).
  9. Serve immediately with your favorite savory toppings, such as hot honey, a fried egg, or salsa.

Notes

  • Using a blender for the wet ingredients is a key step to ensure the cottage cheese is completely smooth and incorporated into the batter, avoiding a lumpy texture.
  • The batter for these waffles is intentionally thick; do not be tempted to thin it out too much.
  • This recipe is highly versatile and can be served with a wide array of savory toppings, as suggested in the ingredients list.
