A quick and easy recipe for a single-serving apple crumble. The dessert features a warm, spiced apple filling that is cooked on the stovetop until tender and thickened with a corn flour slurry. This is topped with a simple crumble made from flour, oats, brown sugar, and melted butter. The individual crumble is then baked in a ramekin until the topping is golden brown and served warm, optionally with custard or ice cream.

  • For the apple filling:
  • 2 small apples (or 1 large apple), peeled and chopped
  • 2 tablespoons water
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons brown sugar (adjustable to taste)
  • 1 teaspoon corn flour mixed with 1 teaspoon water
  • For the crumble:
  • 4 tablespoons plain flour
  • 2 tablespoons oats
  • 2 tablespoons brown sugar
  • 1/4 teaspoon ground cinnamon
  • 25g (about 1.75 tablespoons) unsalted butter, melted

Instructions

  1. Preheat your oven to 190°C / 375°F.
  2. Make the apple filling: In a pot, combine the chopped apples, water, brown sugar, and 1/2 teaspoon of cinnamon.
  3. Place the pot on medium heat and cook the apples until they reach your desired level of softness.
  4. Pour in the corn flour and water mixture, stir it in, and continue to heat while stirring until the mixture thickens, which will take about 30 seconds. Set aside.
  5. Make the crumble topping: In a small bowl, add the plain flour, oats, brown sugar, and 1/4 teaspoon of cinnamon. Mix these dry ingredients together.
  6. Pour in the melted butter and mix with a fork or your fingers until a crumbly texture is achieved.
  7. Assemble and Bake: Spoon the apple filling into a single-serving ramekin or another small, oven-safe dish.
  8. Sprinkle the crumble mixture evenly over the top of the apple filling.
  9. Bake for about 15 minutes, or until the crumble topping has turned golden brown.
  10. Let the crumble cool for a few minutes before serving. Enjoy plain or with a topping of custard or ice cream.
