1 ½ pounds beef stew meat, cut into bite-sized pieces
1 pound baby potatoes, halved
4 tablespoons unsalted butter, melted
3 cloves garlic, minced
1 teaspoon onion powder
1 teaspoon smoked paprika
½ teaspoon dried thyme
½ teaspoon dried rosemary
½ teaspoon salt (or to taste)
¼ teaspoon black pepper
¼ cup beef broth
1 tablespoon olive oil
Instructions
Sear the Beef: Heat olive oil in a skillet over medium-high heat. Sear the beef bites until browned on all sides (about 2-3 minutes per side). Transfer the seared beef to the slow cooker.
Add Potatoes: Add the halved baby potatoes to the slow cooker.
Make the Sauce: In a small bowl, combine the melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper. Pour this mixture over the beef and potatoes in the slow cooker.
Add Broth and Cook: Add the beef broth to the slow cooker. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, or until the beef is tender and the potatoes are cooked through.
