  • 1 ½ pounds beef stew meat, cut into bite-sized pieces
  • 1 pound baby potatoes, halved
  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper
  • ¼ cup beef broth

 

  • 1 tablespoon olive oil

Instructions

  • Sear the Beef: Heat olive oil in a skillet over medium-high heat. Sear the beef bites until browned on all sides (about 2-3 minutes per side). Transfer the seared beef to the slow cooker.
  • Add Potatoes: Add the halved baby potatoes to the slow cooker.
  • Make the Sauce: In a small bowl, combine the melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper. Pour this mixture over the beef and potatoes in the slow cooker.
  • Add Broth and Cook: Add the beef broth to the slow cooker. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, or until the beef is tender and the potatoes are cooked through.
