Let’s build and bake these fun and gooey “Smookies”:
1. Preheat Oven and Prepare Ingredients:
- Preheat your oven to 350°F (175°C).
- Line a large baking sheet with parchment paper. If you need to bake in two batches, you can prep a second sheet or reuse the first one.
- Prepare your components: Slice the refrigerated cookie dough roll into 16 (approximately 1/2-inch thick) rounds. Cut the 16 large marshmallows in half crosswise. Ensure your graham crackers and chocolate bars are halved.
2. Assemble the “Smookie” Stacks:
- Place 6 to 8 graham cracker halves on the prepared baking sheet, leaving some space between each one (about 2-3 inches, as the cookie dough will spread).
- Top each graham cracker half with one half of a Hershey’s chocolate bar.
- Place two marshmallow halves, cut-side down, on top of each chocolate bar piece.
3. Top with Cookie Dough:
- Carefully take one round of the pre-sliced cookie dough and place it on top of each marshmallow-topped stack.
- Gently press the cookie dough down slightly to cover the marshmallows and chocolate, helping to seal them in.
4. Bake:
- Place the baking sheet with the assembled Smookies into the preheated oven.
- Bake for 16–19 minutes. For softer, gooier cookies, aim for 16–17 minutes. For slightly firmer, crispier cookies, aim for 18–19 minutes. The Smookies are done when the cookie dough on top is spread out and golden brown.
5. Cool and Repeat:
- Carefully remove the baking sheet from the oven. Allow the hot Smookies to cool on the baking sheet for at least 5-10 minutes. They will be very gooey and need time to set up slightly.
- While the first batch cools, if you are baking in batches, assemble the next set on another prepared baking sheet and bake.
- Use a spatula to carefully transfer the slightly cooled Smookies to a serving plate or wire rack.
6. Serve:
- Serve the Smookies warm while the marshmallow and chocolate are still gooey and melted. Enjoy!
