⅓ cup unsalted butter, melted
¾ cup whole milk
2 teaspoons vanilla extract
1 ½ cups granulated sugar
1 ½ cups all-purpose flour
2 ¼ teaspoons baking powder
¾ teaspoon salt
2 teaspoons cinnamon
1 ½ cups brown sugar, packed
1 ½ cups hot water
Topping:
¼ cup granulated sugar
½ teaspoon cinnamon
Instructions
Preheat and Prep: Preheat oven to 350°F (177°C). Spread the melted butter evenly in a 9×13 inch baking pan.
Make the Batter: In a large bowl, whisk together the milk, vanilla extract, and granulated sugar. Add the flour, baking powder, salt, and cinnamon, and whisk until just combined. Do not overmix.
Assemble the Cobbler: Pour the batter over the melted butter in the baking pan. Sprinkle the brown sugar evenly over the batter. Gently pour the hot water over the batter and brown sugar.
Bake: Bake for 30-35 minutes, or until the cobbler is golden brown and mostly set.
Add Topping: While the cobbler is still hot, mix together the sugar and cinnamon for the topping and sprinkle it evenly over the cobbler.
Cool and Serve: Let the cobbler cool slightly before serving. Enjoy warm with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
