Snickerdoodle Cobbler: A Warm and Gooey Cinnamon Treat

This Snickerdoodle Cobbler is a warm and gooey cinnamon treat! It’s easy to make, packed with flavor, and perfect for a cozy dessert.

  • ⅓ cup unsalted butter, melted
  • ¾ cup whole milk
  • 2 teaspoons vanilla extract
  • 1 ½ cups granulated sugar
  • 1 ½ cups all-purpose flour
  • 2 ¼ teaspoons baking powder
  • ¾ teaspoon salt
  • 2 teaspoons cinnamon
  • 1 ½ cups brown sugar, packed
  • 1 ½ cups hot water

Topping:

  • ¼ cup granulated sugar
  • ½ teaspoon cinnamon

Instructions

  • Preheat and Prep: Preheat oven to 350°F (177°C). Spread the melted butter evenly in a 9×13 inch baking pan.
  • Make the Batter: In a large bowl, whisk together the milk, vanilla extract, and granulated sugar. Add the flour, baking powder, salt, and cinnamon, and whisk until just combined. Do not overmix.
  • Assemble the Cobbler: Pour the batter over the melted butter in the baking pan. Sprinkle the brown sugar evenly over the batter. Gently pour the hot water over the batter and brown sugar.
  • Bake: Bake for 30-35 minutes, or until the cobbler is golden brown and mostly set.
  • Add Topping: While the cobbler is still hot, mix together the sugar and cinnamon for the topping and sprinkle it evenly over the cobbler.

 

  • Cool and Serve: Let the cobbler cool slightly before serving. Enjoy warm with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
