Ingredients

  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1 onion, chopped

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (6 oz) tomato paste

  • Salt and pepper to taste
  • Cornbread “tombstones” for serving (optional)

Instructions

  1. In a large pot or Dutch oven, brown the ground beef and pork over medium heat. Drain off any excess fat.
  2. Add the chopped onion and minced garlic to the pot, and sauté until the onion has softened.
  3. Stir in the chili powder, cumin, cayenne pepper, salt, and pepper, and cook for another minute until fragrant.
  4. Add the diced tomatoes, tomato paste, kidney beans, and black beans to the pot.
  5. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 30-45 minutes, until the chili has thickened and the flavors have melded.
  6. Serve the chili hot, with optional cornbread ‘tombstones’ for dipping.
