  • 50 saltine crackers
  • 1 cup butter, cut into chunks
  • 1 cup light brown sugar
  • 2 cups white chocolate chips
  • ¼ cup green chocolate melts
  • St. Patrick’s Day sprinkles

Instructions

  • Preheat and Prep: Preheat oven to 325°F (163°C). Line a large cookie tray or baking sheet with aluminum foil and spray with nonstick cooking spray. Arrange the saltine crackers in a single layer on the prepared tray.
  • Make the Toffee: In a medium saucepan, melt the butter over medium heat. Add the brown sugar and whisk until the sugar is dissolved and the mixture is bubbly.
  • Pour Toffee and Bake: Pour the hot toffee mixture over the crackers, ensuring they are completely coated. Bake for about 7 minutes, or until the toffee is bubbly.
  • Melt Green Chocolate: While the crackers are baking, melt the green chocolate melts according to package instructions. You can melt them in a double boiler or in the microwave, heating in short bursts and stirring frequently to prevent scorching.
  • Add White Chocolate: Remove the tray from the oven and immediately sprinkle the white chocolate chips over the hot toffee. The heat from the toffee will melt the chocolate chips. You can return the tray to the oven for a minute or two to help the melting process, but watch closely to prevent burning. Once the chips are melted, spread the white chocolate evenly over the crackers.
  • Decorate: Pour the melted green chocolate over the white chocolate in a decorative pattern. You can use a butter knife or a toothpick to swirl the green and white chocolate together for a marbled effect. Quickly decorate with St. Patrick’s Day sprinkles while the chocolate is still soft.
