Starbucks Copycat Birthday Cake Pops: A Festive Treat

These Starbucks Copycat Birthday Cake Pops are a delightful and festive treat! They’re easy to make, packed with flavor, and perfect for any occasion.

Ingredients

  • 1 box (13.25 oz) vanilla cake mix
  • ⅓ cup neutral oil
  • 1 cup milk or water
  • 4 large eggs

Vanilla Buttercream:

  • ¼ cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 teaspoon milk (add more if needed)

Coating:

  • 12 oz candy melts
  • Sprinkles or nonpareils

Instructions

  • Bake the Cake: Preheat oven to 325-350°F (162-175°C) according to cake mix instructions. Combine all cake ingredients in a bowl and mix well. Pour batter into a greased and lined pan and bake until a toothpick inserted comes out clean.
  • Crumble the Cake: Transfer the hot cake to a large bowl and crumble it using a stand mixer, handheld mixer, or by hand.
  • Make Buttercream: In a small bowl, combine all buttercream ingredients and mix until smooth.
  • Combine Cake and Buttercream: Add the buttercream to the crumbled cake and mix until fully incorporated.
  • Form Cake Balls: Roll the mixture into 1 ¼-inch balls and chill in the freezer for 15 minutes.
  • Insert Sticks: Dip the tip of each lollipop stick into melted candy melts and insert halfway into the cake balls. Chill for 15 minutes.
  • Dip in Candy Melts: Melt the remaining candy melts. Dip each cake pop into the melted candy, ensuring it’s fully coated.
  • Decorate: Gently tap off excess candy melt and decorate with sprinkles or nonpareils.

 

  • Dry: Place the finished cake pops in a styrofoam block or cake pop stand to dry completely.
