Sugar Cookie Bars: A Blank Canvas for Creativity

Sugar Cookie Bars:

  • 1 cup (2 sticks) salted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 5 cups all-purpose flour
  • ½ teaspoon table salt
  • ½ teaspoon baking soda

Cream Cheese Frosting:

  • ½ cup (1 stick) butter, softened
  • 4 oz cream cheese, softened
  • ½ teaspoon almond extract
  • ½ teaspoon vanilla extract
  • 4 cups powdered sugar
  • 2 tablespoons heavy cream
  • Food coloring & sprinkles (optional)

Instructions

  • Preheat and Prep: Preheat oven to 350°F (177°C). Grease a 12×17 or 13×18 inch cookie sheet with nonstick cooking spray.
  • Make the Cookie Dough: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract. In a separate bowl, whisk together the flour, salt, and baking soda. Gradually add the dry ingredients to the wet ingredients and mix until just combined.  
  • Spread and Bake: Spread the cookie dough evenly onto the prepared cookie sheet. Bake for 13-16 minutes, or until the edges are lightly golden brown and the center is set. Let the cookie bars cool completely in the pan before frosting.
  • Make the Frosting: In a large bowl, beat the softened butter until smooth. Add the cream cheese, powdered sugar, heavy cream, almond extract, and vanilla extract. Beat on medium speed for 1 minute, or until light and fluffy.

 

  • Frost and Decorate: If desired, tint the frosting with food coloring. Spread the frosting evenly over the cooled cookie bars. Add sprinkles, if desired. Let the frosting set for about 30 minutes before cutting and serving.
