Unicorn Bars: A Magical and Colorful Treat

Brownie Layer:

  • 1 cup butter, softened
  • 10 ounces white chocolate, chopped
  • 1 ¼ cups granulated sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 tablespoon vanilla extract
  • ½ teaspoon salt
  • ½ cup rainbow sprinkles

Buttercream Frosting:

  • 1 cup butter, softened
  • 4 cups powdered sugar
  • 3 tablespoons heavy cream
  • 3 drops red food coloring
  • 3 drops blue food coloring
  • 1 teaspoon vanilla extract
  • ½ cup assorted rainbow sprinkles for decorating

Instructions

  • Prepare the Brownie Batter: Preheat oven to 325°F (163°C). Grease a 13×9 inch baking dish or line it with parchment paper. Melt butter and white chocolate in a saucepan over low heat. Let cool slightly. Stir in sugar, then eggs one at a time. Add flour, salt, and vanilla extract; mix well. Fold in sprinkles.
  • Bake: Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Cool completely on a wire rack.  
  • Make the Frosting: Beat butter in a large bowl until smooth. Gradually add powdered sugar, alternating with heavy cream, until light and fluffy. Stir in vanilla extract.
  • Color the Frosting: Set aside ½ cup of frosting and tint it blue with food coloring. Divide the blue frosting in half and tint one portion purple with red food coloring.

 

  • Frost and Decorate: Frost the cooled brownies with the remaining white frosting. Pipe diagonal blue lines across the bars, then pipe purple lines diagonally in the opposite direction to create a diamond pattern. Top with sprinkles and enjoy!
