Ingredients
2 chicken breasts, thawed and trimmed of fat
1 ounce taco seasoning (1 packet or 2-3 tablespoons)
1 ounce ranch seasoning mix (1 packet)
15 ounces canned black beans, undrained
15 ounces canned corn, undrained
10 ounces canned Rotel tomatoes with green chilies, undrained
8 ounces cream cheese
Instructions
Layer Ingredients: Place the chicken breasts on the bottom of the crock-pot. Add the taco seasoning, ranch seasoning mix, black beans, corn, and Rotel tomatoes. Place the cream cheese on top.
Cook: Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, or until the chicken is cooked through.
Shred and Combine: Remove the chicken breasts from the crock-pot and shred them with two forks. Stir the chili to combine the cream cheese and other ingredients, then add the shredded chicken back to the pot.
Serve: Ladle the chili into bowls and top with your favorite toppings, such as tortilla strips, shredded cheese, avocados, a squeeze of lime juice, and chopped cilantro.
