The Ultimate Smash Burger Tacos: Your Guide to the Viral Sensation

A trendy fusion dish that combines a classic smash burger with the form of a taco. A ball of seasoned ground beef is placed on a very hot flat top grill, topped with a flour tortilla, and then smashed until the meat is very thin and crispy. The taco is flipped to crisp the tortilla, topped with cheese, and then served with a homemade burger sauce and traditional toppings like lettuce, onion, and pickles.

  • Burger Tacos:
  • 1 pound ground beef, 80/20 fat percentage
  • 1 teaspoon kosher salt
  • 10 cracks fresh black pepper
  • 6 (six-inch) flour tortillas
  • 6 slices Muenster or Provolone cheese
  • Shredded lettuce, for topping
  • Chopped white onion, for topping
  • Dill pickle chips, for topping
  • Burger Sauce:
  • 1/2 cup mayonnaise
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon mustard
  • 2 tablespoons minced bread & butter pickles
  • 1 tablespoon pickle brine
  • 10 cracks fresh black pepper
  • 1/4 teaspoon Worcestershire sauce

Instructions

  1. Make the Burger Sauce: In a bowl, whisk together all the burger sauce ingredients (mayonnaise, paprika, onion powder, garlic powder, mustard, minced pickles, pickle brine, pepper, and Worcestershire sauce). Refrigerate until ready to use.
  2. Prepare the Meat: In a small bowl, mix the salt and pepper. Lightly season the ground beef. Gently divide and roll the beef into 6 balls, approximately 2.5 ounces each. Place them on a plate and refrigerate.
  3. Preheat the Grill: Preheat a flat top grill or large cast-iron skillet to high heat until it is extremely hot. Do not grease it.
  4. Cook the Tacos: Place the beef balls on the hot surface. Immediately place a flour tortilla on top of each beef ball.
  5. Using a burger press or a stiff spatula, press down firmly on the tortilla to smash the meat until it is very thin and spread out to the edges of the tortilla.
  6. Cook for 1 minute, then press down firmly on each tortilla again. Let them cook undisturbed for another 2 to 3 minutes until the beef is browned and crispy.
  7. Using a stiff spatula, forcefully scrape under the burger and flip it over, so the tortilla side is down.
  8. Top the meat with a slice of cheese. Cook for another 2 minutes, allowing the tortilla to crisp up and the cheese to melt.
  9. Serve: Remove the smash burger tacos from the grill, top with the prepared burger sauce, shredded lettuce, chopped onion, and pickle chips. Fold and enjoy immediately.

Notes

  • Special Equipment: A flat top grill (or large cast iron skillet), a burger press, and a stiff metal spatula are recommended for best results.
  • Flour tortillas are recommended as they are more absorbent and the meat adheres to them better.
  • Handle the ground beef as little as possible when forming balls to keep the meat tender.
  • The burger sauce can be made up to 3 days in advance and stored in the refrigerator.
  • The cooking surface must be ‘ripping hot’ to achieve the signature crispy beef crust.
